A breed highly prized among the angling community due to their cunning nature, fighting spirit and great natural beauty, the Brown Trout has been an inhabitant of the British Isles for many centuries.  

Due to their inherently wild and slow growing nature, they are only mainly farmed in small numbers for the purposes of fishing, but at Trafalgar, they are reared for the table. Although they are something of a culinary rarity, their flavour is wholesome.

These fish were the most natural of choices for Trafalgar when it first contemplated applying organic farming principles to the breeding of trout. By its very nature, organic farming requires that fish are grown at low densities and fed on a specific sustainable diet. Consequently, no colourants, additives of any kind may be included in the diet.
